Born in the Val-de-Marne département, in the Paris region, Geoffrey Lembet started his playing career at l'ES Viry-Châtillon as a youth. This promising goalkeeper was then signed up by Sedan in 2007, aged 19, where he would sign his first professional contract two years later. After slipping down the pecking order behind a certain Ulrich Ramé in the 2011/2012 season, he would finally be given his first appearances in that series, as cover for the injured first choice keeper. In 2013, he signed for Auxerre, replacing the injured Sorin, then became understudy to Léon for three seasons.
In 2016, he signed for Red Star, before moving onto Laval, a year later. But lacking the anticipated game-time in the squad, he decided to return to former club, Sedan, in 2019.
He was given a starting berth in National 2 (French Fourth Division.) During the 2019/2020 season, he would keep a clean sheet in the first 13 matches of the season. In the following seasons, he was regularly elected Player of the Season for Sedan, and was often highly-ranked in the top saves of the season in National 1 (French Third Division). On the 19th July, he signed for Stade Rennais as their third-choice goalkeeper on a deal of one season.
