Born at La Roche sur Yon on the Atlantic coast of France, Gianni Sourisseau is a diminuitive defensive midfielder, who began his playing career with Stade Rennais in 1985, where he would be developed in the club's Academy system. He would not actually make the breakthrough into professional football until 1987, when he would make just five appearances, with only one start in the Second Division. In the 1988/1989 season, he would make do with playing in the Rennes Reserves side. He would leave Rennes at the end of that season, and in 1989 he joined Mont de Marsan in the Third Division for a season, before moving onto Angoulême at the same level, finishing his playing career there in 1992. After ending his playing days, he dedicated himself to several professions in the domaine of relaxation.
