German-born, but of Polish origins, Joseph Plesiak grew up in France, obtaining dual nationality (French and Polish). Aged 9, he started his footballing journey, getting his first playing licence with CA Mulhouse, with whom he would win the Regional Championship in Alsace, in the Minimes category (12-13 years old). After his first steps with FC Sochaux, he signed for Girondins de Bordeaux in 1940, and picked up the French Cup with them in 1941 (Against Fives, in a 2-0 victory.) The following season, he had a spell with Troyes, before putting football on the backburner during World War II. In 1944, he signed a contract with Stade Rennais for a season, playing 13 matches in the Northern Group of the French championship, and he also made three appearances in the French Cup. In 1945, he returned to Mulhouse, before signing for Strasbourg in the 1946/1947 season. He would return to Mulhouse once more to finish his professional playing days in the 1948/1949 season. Thereafter, he became Player/Manager for US Thann, a small amateur club in the Alsace region, between 1951 and 1953.
