Born in Quimper, Noël Quiniou started playing football in his hometown with AS Ergué-Armel, before signing for Stade Rennais for the 1951/1952 season. He would make one solitary appearance for Rennes on Matchday 28 of that campaign, in a 2-1 win over Strasbourg on 23rd March 1952, playing in the number 10 shirt. He left Rennes, owing to his lack of gametime, to move to Algeria, where he completed his military service, and joined their main club, AS Marine d'Oran. After his spell there, he returned to France, signing for FC Elbeuf, with whom he won the Promotion d'Honneur league title in 1956.
